Randomness ….

Saturday was a really random day.

I started out early at my favorite coffee shop with friends.

Picked my roommate up and went to our local shooting range for about an hour in honor of Gun appreciation day. (This isn’t me, obviously haha)

Then we picked Lindsey up and went to Rocharin. This is the absolute best Thai in the city and for a few months now we make a point to go EVERY Saturday.

Next Lindsey and I dropped my roommate off a headed to the Fashion district in downtown Los Angeles! Oh my goodness! I had been here to film before but I had never walked around here just to shop. Dangerous for your pocketbook!

Our favorite place was Michael Levine, (these photos are off their yelp page) This is their main store but I adore their home fabric shop across the street! Oh my goodness!

This is just one of my favorite Internet finds, I feel bad I cannot remember how I found it but this is a beautiful thing to remember! This is the background on my phone I love it so much.

Your Homebased Mom

(Please try the Parmesan sour cream chicken posted this morning! we made it again tonight and it’s so good! Tonight we made wild rice with it)

Dinner: Sour Cream Chicken and White cheese Mac & Cheese

One night Lindsey and I were making dinner but couldn’t decide what to make, she jumped on Pinterest while I looked to see what supplies we had. She found this:

So we made it our way!

PARMESAN SOUR CREAM CHICKEN

• Mix 1 C. Sour Cream, 1/2 to 1 C. Grated Parmesan Cheese, Dill, Diced Garlic, salt, & pepper together.

• Put halved chicken breasts into a shallow baking dish.

• Cover Chicken well with sour cream mixture.

• Sprinkle on 1 C. Breadcrumbs (or a light layer). And a little more Parmesan.

• Bake @ 350 until it reaches an internal temperature of 165.

Triple White Cheese, Mac & Cheese

• Boil you favorite macaroni until Al Dente.

• Grate 1 lb Jack cheese, a small block of Aged White Cheddar, & some more Parmesan.

• Open 1 small
Container Feta

• Grab a sauce pan, make a roux 1/2 C. Flour and 1stick (1/2 C.) Butter.

• Cook over Med/Low heat for approx 5 minutes. (You want this to stay a light roux)

(Sorry I didn’t really photo this cuz I’m lame!)

• Add 2 C. Milk & all your cheese.

• Stir until melted and gooey.

•Mix with your cooked pasta. Pour into your dish of choice.

• Top with a little more cheese, Parmesan if you have it!

• Bake 20 minutes @350.

Banana Muffins with Chocolate chips

So here is the second half of Wednesday night baking with Lindsey. While she was making donut “poops” I made Texas Sheet Cake and this banana bread (which I made as muffins with chocolate chips. Both recipes were handed down from my Grandma Gile.)

These are great for weekend breakfast or snack. (Much healthier without the Chocolate chips though, obviously)

• Add 3/4 C. Sugar, 1/2 C. Oil, and 2 Eggs and mix until frothy.

• Add 1 C. Mashed Bananas, 1 tsp. Vanilla, 1 tsp Cinnamon, & 1/2 tsp. Nutmeg and mix really well (it will be more frothy now).

• Add 1 3/4 C. Flour, 2 tsp. Baking powder, 1/2 tsp Baking soda, & 1 tsp. Salt (once again lol) mix well.

• Add 1 to 2 C. Chocolate chips & nuts (if desired).
• Scoop into muffin cups.

• Bake @ 350 for 16-22 minutes (depending on the size of your muffins) or you can always make it a loaf.

Texas sheet cake

So Wednesday I really wanted to bake some Noms. I called Lindsey, printed some recipes that are from my Grandma, and it was on! I made her Texas sheet cake and her banana bread. I will post the banana bread tomorrow.

Texas Sheet Cake

#1- In a mixing bowl add 2 C Flour, 2 C. Sugar, 1 tsp. Baking Soda, 1 tsp salt, & 1/2 tsp Cinnamon. Mix well and set aside.

#2- Grab a small saucepan, add 2 sticks unsalted butter, 4 T. Cocoa powder, 1 C. Water.

#3- Bring to a light boil, just until the butter is melted and everything is combined.

#4- Pour your butter, cocoa mixture into the flour mixture and mix well.

#5- Add 2 eggs & 1/2 C. Buttermilk (I didn’t have buttermilk so I soured 1/2 C. Milk with 1 tsp lemon juice). Mix well.

#6- Pour into a 13×9 pan and Bake @ 350 for 25 minutes.

Now onto the Frosting!

#1- Add 1 Stick Butter, 6 Tbsp. Milk, 4 Tbsp. Cocoa powder, & 1 tsp Vanilla to your same small sauce pan. And once bring almost to a boil, until the butter is melted.

#2- Add 1 box (or appox 4 C.) Powdered Sugar to a clean bowl.

#3- Pour Cocoa mixture over powdered sugar and mix well.
#4- Add Nuts now if desired.

Once your cake has cooled a bit, pour your frosting over your cake and spread!
I topped mine with crushed peppermint candies (cause I am addicted to all things peppermint).

Valentine’s day wreath

Two Girls and a Puppy

Oh my goodness, did you all see Two Girls and a Puppy Tuesday on Facebook ? So cute!

These sisters talked their dad into getting them a puppy if they could get 1 million “likes” on their profile picture. So they started a page and sent it to friends, it went viral so fast it was mind boggling! Within 7 hours (I think) it had hit the needed 1 million! At this point the kids were in bed and the parents were posting how shocked they were.

When I checked tonight they were over 2.5 million likes on the profile photo that started it all! It’s created such a stir they are even going to be on Good morning America tomorrow. Check out their page! It was such a cute story I wanted to share!

Sunday brunch and Kick a** burgers

So Sunday turned into a foodie day over here! My roommate/brother and I made brunch with a group of friends, then made flan for that evening. After that Lindsey came over and she made some Incredible kick ass burgers!

Who doesn’t love flan?

Flan, who doesn’t love flan. It’s basically a custard like creme brûlée but with a caramelized sugar in the bottom instead of caramelized, brûléed sugar on the top.

Mmm oh my goodness I cannot get enough of the crazy vanilla in these custards… Just look at the yummy vanilla beans all over!

So start with the Basic Creme Brûlée recipe I posted a couple weeks ago.

But here is the difference!

First butter your ramekins!
(Important for flan, we don’t do this for creme brûlée)

Get a small pan out, add:

3/4 C Sugar
1 TBSP Corn Syrup (organic if possible)
1 Oz water

(The corn syrup helps keep the sugar from re-crystallizing, a total lifesaver unless you are really experienced with sugar work)

Cook this over med/high heat until medium amber color, stirring gently. (and very carefully, molten sugar can burn you badly. I’ve learned from experience!)

As soon as you reach a medium amber remove from stove, it will continue darkening!

Now (carefully) pour a little into each buttered ramekin.

Set aside while you make the custard.

I’m not going to go through the custard part again since its here!
(If you have ANY questions please ask in the comments!)

Ok, when your custard is all ready, poor it on top of the hardened caramel in your ramekins.

BAKE in a water bath until it moves like jello when you tap it.

Chill in the fridge until completely set and cool.

TO SERVE you need to warm the bottom of the ramekin then turn out onto a plate. – to do this, I set a low wide sauce pan with a little water on the stove, set the ramekins in. After 5-8 minutes it should be warm enough.

Run a thin knife around the edge and turn out onto a plate! (If it doesn’t turn out continue heating for 2-5 more minutes)

Easy Super soft blankets

Lindsey and I went to Joann’s not long before Christmas and I saw this fabric, I couldn’t leave the store without it. So soft and cuddly. So I decided to make one for my sister (and myself). After my mom saw it she asked me to make her one as well. This is what I spent Friday doing.

What you need:

2 yards of a fleece or super soft blanket fabric
4 packs of bias tape. (Extra wide double fold)
Matching thread

Process:

#1 – open the bias tape and pin along 1 edge.
#2 – sew along the first fold line.

#3 – fold over and pin again.
#4 – sew along the edge of folded side.

# 5 – repeat this for the remaining three sides ( for the corners I just trim and fold it over so there’s no exposed edge and however it looks best)

Once you’ve done all 4 sides that’s it, you now have an awesome, new, cuddly blanket 🙂
