What we’ve been up to with Echo’s Friends’ Cookies!

Hi all! Sorry for being kinds of missing in action this week, Lindsey and I have been busy making puppy treats and launching Echo’s Friends’ Cookies!!

Saturday Lindsey and I made Puppy Truffies to take to Camp Run-a-mutt Sunday.

We also made:

Peanut butter Banana Crunchies

Carrot Banana Sticks These now have flax seed meal instead of corn meal, which we all like even better.

We took all these to an event at Camp Run-A-Mutt! Julie (the awesome manager) set us up with a spot and a table to sell our treats/cookies! The pet parents reactions were very positive and the dogs loved them!!

And Sunday night after the event Lindsey came up with a new one!!

Chicky Crisps!
These came out so good once again we couldn’t stop eating them. We think they need to be a people treat too!

Busy day off

That is definitely my favorite photo from yesterday!

Yesterday I was all over the place as usual, luckily my sister Sierra has been in town and I’ve gotten to spend some awesome time with her around working. And of course we dragged Lindsey in as well!

Back to the day, after working late the night before I slept a bit later than usual then jumped up got my coffee with Echo in tow. Came home got Sisi (Sierra) went and got her phone repaired. Came home again, cleaned a bunch, gave the girls a ton of lettuce from the garden

Had a painter out for an estimate, took Echo to Camp Run-A-Mutt for daycare,

Then headed to get Lindsey and got Boba!

After running a few more places we headed back to the house again, i started working up a cost calculation for our “Echo’s Friend’s Cookies” while Lindsey worked on these amazing and incredible rock veggie markers for my garden!!

Then Sisi showed back up with her awesome friends in tow and decided to attempt to eat 100 chicken mc-nuggets (not a thing I condone but slightly entertaining none the less).

Later we all went to pick Echo up from Camp Run-A-Mutt that’s when this happened haha

After, the teens had all their bikes out so Lindsey and I took Echo out to see how she would do walking along side us on bikes

When I took Echo to Camp Run-A-Mutt for daycare the awesome manager Julie told me that the treats we took over “Echo’s Friend’s Cookies” went over great and asked when we wanted to bring more in! So after all that bike riding Lindsey and I set off to make more! Here’s some photos ( I will cover them in more detail soon)

Oh and again tonight my hen Starla did not put herself to bed, I have no idea what’s wrong or what’s bothering her, hopefully tomorrow I will be able to figure it out after further investigation. have you have had a chicken act the way? Not wanting to go to bed in the coop suddenly after almost a year of doing so everyday.

Echo’s Friend’s Cookies

Yesterday Echo went back to Doggy Day Care and had a blast again at Camp Run-A-Mutt South Bay! While I was there I got to talking with the awesome manager Julie about the adoption event coming up. She mentioned that they have vendors at these events and asked if I baked dog treats. Later when I was with Lindsey we cooked up an idea. 20130329-191507.jpg

While she was there today Lindsey and I ran all over so I could get all my Easter groceries. We also bought all the supplies for making awesome, mostly organic, non-GMO dog treats! Here’s what we made:

Peanut Butter Banana Crunchies
Adapted from Witty in the City

1 Banana (organic)
1 C Oat Flour
2/3 C Rolled Oats
5 TB Peanut Butter (non-GMO)
1 egg (non-GMO)

• Pulverize 2 C rolled oats in a food processor. 20130329-194319.jpg

• In a mixing bowl – Mash 1 banana

• Add 1 C oat flour

• Prep your counter for rolling out.

• Bake at 350 until lightly browned on the bottom and 1/2-3/4 of the moisture as evaporated.

After they were all done and cooled we took them to Camp Run-A-Mutt for them to check out, feed to their pups, and send home with other camper parents to take home!

Sticky Chocolate Brownies

I know I just posted about weight loss and fitness but Lindsey and I decided again that we needed chocolate, yes again needed, (haha). So instead of just eating Nutella or chocolate chips I remembered this brownie recipe that i made and the past that was also pretty quick.
From this book:

So here it is:

Sticky Chocolate Brownies

• Grab a small sauce pan and add: 1 TBSP Light Corn Syrup, 3 oz. Butter, 3/4C. Superfine Sugar, 1/2C Brown Sugar, and 4 1/2 oz. Semi Sweet Chocolate .

20130313-222404.jpg (I used more chocolate then recommended, I added some mini choc chips, some white, and 2 squares super dark)

• Heat gently until combined well.

• Cool your chocolate mixture after its ready.

• Meanwhile, add 2 eggs, and 1 tsp. Vanilla extract to a mixing bowl and whisk.

• Slowly mix the chocolate mixture into the eggs. And add 3/4C Flour.

• Pour into a well greased cake pan and bake for 25 minutes @ 350.

It is super gooey, rich, sticky, chocolatey, moist, and amazing!

Nutella croissants and wontons

The other day Lindsey and I needed (yes needed not wanted, lol) something nommy, baked, and filled with Nutella. Luckily Lindsey had a pack of refrigerator crescents in my fridge. It was a perfect marriage, Nutella filled crescents, yummmm!

Lindsey rolled them out, spread them with lots of Nutella, rolled them up, and sprinkled with cinnamon sugar.

They came out awesome, warm, buttery, Nutella-y, and perfectly satisfying.

Meanwhile we also wanted to see if you could bake wontons in the oven, to save the calories of frying.

These were very tasty and worked well but definitely not as incredible as frying. They were great fresh out of the oven but far too chewy once they had cooled.

Both totally satisfied our need for Nutella.

Airplane cake part 2

As you can see the cake came together great!! But I will finish taking you through how we got there!

I pushed it back up and started on a new one! Luckily I was semi prepared for this outcome. So I added two more couplers and plugs and screwed the same plywood used for the wings onto the PVC plugs. (I hope that makes some sense)

Then I laid fondant over the base… I prepped and frosted the actual cake part of the cake

We put the plane on, iced the grass around, painted the base fondant, and added the Birthday girls name!

Airplane cake part 1

I mentioned this yesterday but the last three days I have been making this airplane cake for a client that is a friend. I cannot show you all of it today because the lovely lady he bought it for doesn’t get it until this afternoon! But I can show you part 1.

The idea for the cake is a 3-D airplane over a Tarmac. So Lindsey, Riley, and I started designing and engineering the structure. We decided to make the plane from Rice Crispies. And the Tarmac the cake.

I started my screwing the new 2ft x 2 ft Cake board onto a previously made cake stand

Adding PVC plugs onto the base for the plane stability.

While I was doing this Lindsey started planning the wings and drawing them onto very thin plywood.

Next we started cutting PVC for the plane structure.

Chocolate Buttermilk Cake

The last three days I’ve been working on this awesome cake for my clients, he is also a friend of mine I’ve known him for many years he actually works on the television show Bones. I’ve known him for about 7 years we met on the low-budget movie. But I can’t show you the cake yet because I deliver it to him tomorrow after I deliver it I can show you!

So, today I’m going to share with you my chocolate buttermilk cake that’s adapted from … (Link to come)

Chocolate Buttermilk cake

• Cream 1 C Butter and 2 1/4 C Sugar.

• In a microwave safe bowl melt some of your favorite Chocolate. I use three different Chocolates.

• Add the melted Chocolate to your butter mixture.

• Add 1 1/4 C Buttermilk and 3 C Cake Flour mix well.

• Add 1 tsp. Baking Soda and 1/2 tsp Baking Powder.

• Separate 5 eggs.

• Add 5 yolks to batter, mix well.

• Beat 5 egg whites to stiff peaks.

• Fold beaten egg whites. into batter

• Pour batter into a well greased and floured pan.

• Bake at 350, until toothpick check comes out clean.

Weekend ramblings…

This weekend was full of friends and cleaning.

Saturday Nicolle came over and we got started editing Rusty J’s next music video!!
