Egg Muffins: Quick, Easy, Healthy

Wednesday I made these breakfast egg muffins to have a high protein, low calorie breakfast already made for work mornings! Here’s how i did it:

Egg Muffins with Spinach and Potato

• Cut up 1 large Potato ( small cubes), 1/2 an Onion, 1 C Spinach.

• Sauté potatoes and onions with 1 TBSP Olive Oil. until they start to soften and get color.

• Season with salt, pepper, garlic powder, cumin, and a tiny bit of Chili powder.

• Add spinach and sauté until wilted.

• Beat 8 eggs with 1/4 C Milk, a little salt, and pepper.

• Prep a muffin pan with liners and little olive oil spray.

• Fill muffin cups 1/2 full with egg mixture.

• Distribute Potato/veggie mixture evenly between cups.

• Bake at 350 for 20-30 minutes or until eggs are set.

These are so versatile, You can fill them with anything you want! Bacon, sausage, cheese, ham, any veggies… Heck maybe even pieces of pancake (I don’t know if I’d do that but it could be awesome!)

And they are only 84 calories each!

Fitness update

Lindsey and I have been consistently counting calories for weeks now. It’s going great. So far I’ve lost 11 pounds! I didn’t think I was losing so I stopped checking the scale for a while then weeks later when I did I was very pleasantly surprised. (I’ll let Lindsey update you on her progress)

I hope to get back to working out more again, life has really gotten in the way. Soon, hopefully tomorrow or this weekend.

High Protein Breakfast

HAPPY VALENTINES DAY!!! I hope everyone has a beautiful day!

So…
Last night I cooked up some ground turkey I love the stuff! That morning I had gone to Costco (almost completely ran out of TP, not good), and when I’m there I try to pick up ground turkey. It’s cheaper there, At the store it’s usually $4.50 – 5.50 for 1.25 Lbs, at Costco it comes in a 4 pack for $15-17. I bought two 4 packs, so 10 pounds. I really do love ground turkey as you can tell.

After I cooked it up with simple seasoning, I separated it into 4 oz servings as its 160 calories for 4 oz.

Here’s my breakfast using the left over ground turkey.

• Grab 1 or 2 Eggs, (I used two)

Once it’s mostly cooked,

• Add 4 oz ground turkey. and stir it in.20130214-011427.jpg20130214-011436.jpg

• Next I added 1/4 Jasmine Rice that was leftover as well. 20130214-011638.jpg20130214-011649.jpg

• Season to taste. ( I used minimal since my rice and turkey were already seasoned)

• Once everything is warmed through, plate, and enjoy!! I also sprinkled a little dil on top after playing. 20130214-011824.jpg20130214-011833.jpg

This breakfast is great, 380 calories, 35.5g Protein, 17.5 g Carbs! 20130214-012740.jpg The only thing bad is the 17 g fat. Though egg whites would take that down to, 8 g fat and 290 calories!

Back to the gym + awesome Fitness Apps

Surprisingly I actually love working out, I’m just really bad at being in the habit of doing it! Since work is slow and my taxes are done I decided to make it a priority again! Hopefully this time a life change rather than temporary. A few years ago I went almost 5 days a week no matter what hours I was working. One month I lost 30 pounds, doing kick boxing 5 days a week and yoga up to 3 times a week, that was a lot of time at the gym!

Lately I’ve been missing strength training and the elliptical so I went. I have a lifetime membership to 24 hour fitness, somehow when I was 17 they had this awesome deal going and I jumped on it, I’m so thankful now for that decision.

In the past 5 days I have gone to the gym twice, done Turbo Kickboxing with Lindsey, and taken the dog for a walk which I talked Lindsey into as well. So workouts 4 out of 5 days, not too shabby. Now I have to decide what to do today, Turbo Jam (kick boxing) at home, P90X yoga at home, a long walk with Echo (if it stops raining), or a trip to the gym.

Also I wanted to share with you some of the awesome apps I am using to track everything!

“Map my walk” tracks how far we go and announces when we’ve reached 1 mile, etc. The one I’m using is the free version of the app.

Then there’s “My Fitness Pal”, this one is my favorite. I have friends that use this one, I can see how they are doing and they can see how I am doing.

In it I track my food and exercise for the day.

I can add recipes to it so I know the calorie count per serving and save it for the future.

Next, “Moves”, Lindsey showed me this app. It stays in the background all day tracking how much you’ve walked, cycled, & ran that day. Kinda awesome.

Hopefully that will be near 10,000 at the end of everyday. That’s a great goal. So far I’ve been at home cleaning and handling a lot with my phone on the counter so I’ve only hit 3,000 in a day. But I work tomorrow so it should be way higher!

Chicken and wild rice with Spinach

This week I started tracking calorie intake, which is part of why I created my Skinny Banana Cookies.

So for dinner last night I wanted something I could easily track calorically. So I made:

Chicken and Wild Rice with Spinach

I added the full carton of Chicken Broth into a medium pan. (20 cal)

• Season broth to your taste, bring to a boil! Here’s what I used

• While that’s coming to a boil, chop 1/2 an onion add to a sauté pan.

• Slowly brown onions, no oil!

• Cut chicken breast in half then split pieces. (220 cal)

• Add to pan with onions and season.

• By now the broth should be boiling, to your broth pan, Add 1 C Wild Rice.(640 cal)

• Brown chicken until cooked, deglaze pan with a little white wine

• Chop chicken, and re-add to pan.

• Shred and add some spinach

•When your rice is done, you can put your chicken on your rice or mix it into the rice.

Next time I will double the spinach, I LOVE sautéed spinach.

Split for 2 = 440 calories per serving.

Skinny Banana Cookies

Last night after I dragged Lindsey and Echo on a 1.25 mile walk with me I decided to try creating a recipe for a lower calorie but still satisfying cookie!

Here’s what I came up with:

Skinny Banana Cookies

3 Bananas (Mashed)
2 TBSP Oil (I used blood orange olive oil)
2 Eggs
1 tsp Baking Soda
1/2 tsp Baking Powder
2 tsp Vanilla
2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 C Flour
1 1/2 C Oats
3/4 C Puffed Rice Cereal
1/4 C Mini Chocolate Chips (I used 1/2 C which was a little to much)

• Add banana and oil, mix.

• Scoop onto parchment lines cookie sheets, Bake at 350 for 8 minutes!

White chicken chili

Yesterday was great, finally the house was completely empty and quiet, and that gave me a chance to clean all the dust bunnies, soap scum, and dishes that have been building up all week.

I took a magic eraser (these are priceless) to my shower, scrubbed the bathroom, and did a huge load of dishes. I love how productive a cleaning day can be.

The chickens got a few hours of yard time and Echo go some play time around the yard too.

I even got the coffee table back from my roommates tv

In the evening I finally headed to the gym, I have been wanting to start working out regularly for ages, I miss it! So I finally went and now I remember why I love going, you just feel so great and have so much energy after a good work out 🙂

After the gym I really wanted protein, just come good chicken with very little carbs, enter White Chicken Chili! I love Carrol Shelbys chili seasoning and a while back I noticed there was a new mix for chicken white chili so I grabbed it and its been in my pantry waiting for me to finally try it.

White Chicken Chili

1 to 2 Lbs Chicken Breast (cut to 1/2 in pieces)

1/2 Onion (diced)
3-4 C Water

Box of seasoning from Carrol Shelby

• Chop up your chicken and add it to a big pan with a little oil.

• Chop onion and add it to the browning chicken.
