Spanish Rice

Today was a nice day handling stuff at home, fertilized the veggie garden, cleaned, worked on Rusty J’s music video, and made dinner with Lindsey among other things. Lindsey’s friend Mikey even came and joined us for dinner!

For dinner we went to the hispanic market by my house and got Carne Asada, so I made Spanish Rice to go with it!

• Add 4 C Chicken broth to a medium sauce pan.

• Season with: Salt, Pepper, Cumin, Chili powder, Cayenne pepper, & paprika.

• After that is boiling, Add 2 C White Rice.

• Cover and Cook 20 minutes. Check and stir at 10 minutes and 15 minutes.
(So sorry I forgot to photograph this part!)

• When the rice is cooked and the liquid is all absorbed, stir in 1/2 Can Tomato Sauce & 1/2 Can Diced Tomatoes.

Also here is how Lindsey cooked the Carne Asada! (I’ve always made it on the BBQ but this was great as well!)

She cut up the meat.

It was sooo damn good! I think she also added a little beer near the end!

We ate all this with some salsa verde, queso fresco, warmed tortillas and avocado! Perfect quick dinner!

Chicken and wild rice with Spinach

This week I started tracking calorie intake, which is part of why I created my Skinny Banana Cookies.

So for dinner last night I wanted something I could easily track calorically. So I made:

Chicken and Wild Rice with Spinach

I added the full carton of Chicken Broth into a medium pan. (20 cal)

• Season broth to your taste, bring to a boil! Here’s what I used

• While that’s coming to a boil, chop 1/2 an onion add to a sauté pan.

• Slowly brown onions, no oil!

• Cut chicken breast in half then split pieces. (220 cal)

• Add to pan with onions and season.

• By now the broth should be boiling, to your broth pan, Add 1 C Wild Rice.(640 cal)

• Brown chicken until cooked, deglaze pan with a little white wine

• Chop chicken, and re-add to pan.

• Shred and add some spinach

•When your rice is done, you can put your chicken on your rice or mix it into the rice.

Next time I will double the spinach, I LOVE sautéed spinach.

Split for 2 = 440 calories per serving.

Waiting for election results

I am nervously waiting for polls to close on the huge Election Day!

Baking cookies, making dinner, praying, and waiting to see what happens with fingers crossed. I sent my ballot in a week or so ago, as I tend to vote by mail.

What are you doing today? Baking, cooking? What was your experience at the polls today ? I would love to hear how you spent election day!

I put some chicken and rice into the crockpot, with organic Italian seasoning, chicken broth, and garlic cloves. Let it cook for the afternoon. Yummy!
