Egg Enchilada Casserole

Lately we have been on a Mexican food kick around here. For breakfast yesterday I decided to cook up my take on my Grandmothers egg enchiladas.

She always used diced green chilies and Taco Bell mild sauce but I’m going with Las Palmas Green Chile enchilada sauce.

I have always saved and saved any packet of Taco Bell Mild sauce to make these and still do, but today I had the Green Chile enchilada sauce left over and wanted to use it. (Plus i kinda don’t like the chile skins and seeds in the diced green chilies)

So here goes!

Egg Enchilada Casserole

8 Eggs
1/4 C. Heavy Cream
6 to 10 corn tortillas
1/2 Large can Las Palmas Green Chile Enchilada sauce
2 C. Grated Cheese
Salt and pepper

• Cover bottom of a baking dish with the enchilada sauce and cover with corn tortillas.

• In a bowl, beat 6 eggs with heavy cream, salt, and pepper.

• Scramble eggs over med/low heat until almost set.

• Mix 1/2 C. Grated Cheese and 1/2 C Enchilada sauce into your eggs. Combine and warm until warmed through.

• Add to your baking dish layered on the corn tortillas

• Cover with more cheese (if desired, I didn’t) and corn tortillas.

• Top with enchilada sauce and cheese.

• Bake uncovered at 350. For 20-30 minutes, or until the cheese is throughly melted.

Can serve with Bacon, breakfast potatoes (I will post these soon), or your families favorite breakfast foods.

Celebrity chef and a favorite quick Lunch

Yesterday I got to meet Celebrity Chef Susan Feniger. She was on Top Chef Masters, had a Food Network Show, and has multiple restaurants here in LA and all over. She was in a scene for a show I was working on. I got to speak with her about her newest restaurant Street. Which I hope to go eat at soon!

Today I wanted to share with you one of my favorite lunches (or dinners) when I have a quiet day at home. It might seem a bit odd but I love ground turkey so it works for me.

Pesto Pasta with Ground Turkey

(You can always make this with grilled chicken breast instead! Which I’ve done in the past)

• Boil water for your pasta. I used bow tie but use your favorite!

• Cook pasta till al Dente and drain.

• Meanwhile brown your ground turkey.

• Season with salt,
Pepper, and garlic.

• Warm up you favorite pesto. (Usually (like today) I have some that i made in my freezer, but you can use a jar or a sauce powder packet.)

• Once your pesto is ready add some heavy cream to it. Base the amount on how you like it balanced.

• When everything is ready, I just mix it all together. (But you can always just add the pesto to the pasta and keep your meat separate!)

I don’t know why I love this so much but I do! Especially if I haven’t had pasta in a while.

White chicken chili

Yesterday was great, finally the house was completely empty and quiet, and that gave me a chance to clean all the dust bunnies, soap scum, and dishes that have been building up all week.

I took a magic eraser (these are priceless) to my shower, scrubbed the bathroom, and did a huge load of dishes. I love how productive a cleaning day can be.

The chickens got a few hours of yard time and Echo go some play time around the yard too.

I even got the coffee table back from my roommates tv

In the evening I finally headed to the gym, I have been wanting to start working out regularly for ages, I miss it! So I finally went and now I remember why I love going, you just feel so great and have so much energy after a good work out 🙂

After the gym I really wanted protein, just come good chicken with very little carbs, enter White Chicken Chili! I love Carrol Shelbys chili seasoning and a while back I noticed there was a new mix for chicken white chili so I grabbed it and its been in my pantry waiting for me to finally try it.

White Chicken Chili

1 to 2 Lbs Chicken Breast (cut to 1/2 in pieces)

1/2 Onion (diced)
3-4 C Water

Box of seasoning from Carrol Shelby

• Chop up your chicken and add it to a big pan with a little oil.

• Chop onion and add it to the browning chicken.

• Season with salt, pepper, & Garlic

• Add the water, seasoning packet, the jalapeño/pepper packet, & the masa packet

• Cook 15 minutes covered then 15 minutes uncovered.

Chocolate Pistachio Cake

My grandmother’s friend used to bring this cake to her house when I was young. Everyone always loved it!

This is one of those quick whip up cakes when you don’t have time to bake from scratch. Although I really want to test out a recipe for this from scratch. Soon Lindsey and I will do this! (I just informed her of this)

Until we do that, there is the recipe as it is now:

Chocolate Pistachio Cake

• Start with 1 box yellow cake mix and one large box (or 2 small) Pistachio Pudding add to a mixing bowl and mix well.

• Add 4 eggs, 1 C. Water, 1/2 C. Oil, & 1/2 tsp Almond extract (I used 1 tsp. vanilla extract as well)

• Scoop out 1 1/2 C batter into another bowl.

• Add 1/4 C. Chocolate Syrup and mix well.

• Alternate scoops of both into a bunt pan.

• Bake @ 350 for 50 minutes. Check at 40 minutes.
