Easter follow up

Easter was great, beautiful morning at church with the family. Pastor Henry and Dan baptized me, many people stayed to watch the baptisms. We had 9 people at the late service all being baptized it was an incredible experience.

Then I came home and before I could start dinner I took poor Echo to the vet.

She had a bordatella shot last week and it seems like she has kennel cough symptoms now 😦 Luckly the new vet I found is amazing and wonderful, they were open Easter Sunday and only charged their regular price. The vet and staff were so sweet and attentive, and they even called the next day to see how she was doing. I’m so thankful to have found them, and Exho seems to be doing much better.

After all that I finally got to making Easter dinner! I didn’t get many photos but we had:

After Dinner, we waited for the food coma to pass and celebrated my Sister’s and James’ Birthdays

Plus I got to see moms little dogs that I don’t get to see often anymore! That’s Noni and Cooper. I didn’t get a pic of Coco but she’s a tiny Maltese that is my dads little girl.

HAPPY EASTER!!!

What are your Easter plans for today?

I am going to church and getting Baptized today! For some reason I have just never done it, but today I finally am.

My family is coming to town to go to church with me and support me for the baptism, which I am so thankful for!

After church I am going to make a version of my Grandmothers traditional family Easter dinner.

I’m making:
Glazed Ham
Mac & Cheese (& a 2nd Gluten Free)
Sautéed Red Potatoes (my Grandma would usually make mashed)
Cornbread Stuffing ( & a 2nd Gluten Free)
Gravy

That’s all for this Easter. Usually for holidays I also make cornbread casserole, green bean casserole, sautéed summer squash, and candied sweet potatoes.

Does your family have an Easter Dinner? What do you eat for Easter? I see people talk about Hot Cross Buns and Easter Bread, do you make these? Are they a tradition in your family?

Super Bowl Sunday and Taxes

Sunday started off at the Corner Store in San Pedro with Lindsey and Jessie then a walk by the ocean, it was awesome!

After we parted ways I went home to finish my tax paperwork, I hate getting all the totals ready for my tax man but I do love getting it out of the way as soon as everything comes in the mail.

Because I work on so many different shows I get a stack of W-2’s and 1099’s, this is just from one payroll company!

I have to do long form taxes, I’ve been doing it this way since I was 17. It takes weeks to get everything together! Luckily a few years ago I worked for my incredible friend Christina Flowers, who is a CPA and because of her I learned so much about taxes and bookkeeping! This has made my life so much easier, now I use quicken (she taught me quickbooks, but quicken is cheaper for personal use) to download all my accounts, and then I can go through and categorize the things I need to write off, so much easier! Although this year I didn’t keep up the downloading often enough and had to manually enter 4 months worth of transactions.

Sunday before and during the Superbowl I settled at my desk…

And I finished adding to quicken, scanned everything else, and filled out the “organizer” my tax man sends me.
It’s all ready to email to them now, I am sooooo glad! Now I just need them to answer their phone so I can send it, lol.

This is the stack I have to keep for my records, so much stuff!

All the while I was watching the game, I tend to wait until the playoffs to pay attention to football but I LOVE watching the Superbowl. Here’s my roommate’s super bowl breakfast.

20130204-222250.jpg He decided my big tv “burtha” wasn’t good enough so he brought out his tv and set it up in front of burtha, weirdo. 🙂

Near the end of the game sometime in the 4th quarter I had finished my taxes, yay!! And we headed to our favorite hookah spot to watch the last 3 minutes (which was more like a half hour) and meet friends! It was a great night with good people.

I was bummed the 49ers didn’t pull off their comeback but all in all the 2nd half was awesome.

Sunday brunch and Kick a** burgers

So Sunday turned into a foodie day over here! My roommate/brother and I made brunch with a group of friends, then made flan for that evening. After that Lindsey came over and she made some Incredible kick ass burgers!

Labor day weekend and Sunday afternoon Chilaquiles

This weekend we didn’t go out of town, we decided to spend it here at home going out to dinner and enjoying random things the south bay has to offer.

Saturday we went to get coffee with friends, swam for a short time, then decided to go to Mulligans and play Mini Golf. Which turned out to be a lot of fun!

Sunday we spent more time at home, I made pancakes for breakfast (because I wanted to use my fresh farmers market blueberries), made chilaquiles for lunch, and saw 2016 Obama’s America.

So on to the chilaquiles, I had never had chilaquiles until about 6 months ago. Now I have had it a few times and I really like it. I decided to make mine with some extra veggies i had from the farmers market.

#1 – Cut up veggies ( I used mushrooms, bell pepper, and squash)

#2 РSaut̩ with a little oil, season to taste. ( I used salt, pepper, garlic salt, and chili powder)

#3 РWhile that is saut̩ing, whisk eggs with a little salt and pepper and set aside.
(I love these Rhode Island Red eggs I got from the farmers market)

#4 – When the veggies are cooked to your liking remove them. (they will be added back in later)

#5 – Add a little more oil to your hot pan.

#6 РAdd day old tortilla chips. Saut̩ for 3-5 minutes in the oil.

#7 – Add your favorite tomato sauce or salsa and cook 3-5 more minutes.

#8 – Scooch the chip mixture over in the pan…

#9 – Add your eggs. Carefully scramble.

#10 – While doing that I added a little hot sauce to the chip side.

#11 – Keep gently scrambling eggs till set.

#12 – Now that the eggs are set, mix with chips mixture.

#13 – Add the veggies back in, and mix.

#14 – Add lots of cheese and mix in.

#15 – Top with more cheese and a little fresh green onions.
